Taste: Medium / intense, grassy, bitter taste of fresh olives, rosemary, mint, pungent final.
Pairings: roasted meat, stews, veggie or meat hashes, beans, spicy soups and sauces, cooked vegetables with a slight preference for kale, chard, spinach and all dark green leaves. Radicchio, rocket and watercress salads. Amazing on bruschetta.
