Our Traditional Balsamic Vinegar of Modena is the one and only Demeter certified biodynamic in the category.
It is produced according to an ancient local tradition, from the acetification of cooked grape must (freshly crushed grape juice) then aged for at least 25 years into a system of 7 barrels of different dimension and different woods. According to a biodynamic system, every barrel is connected to a planet: Moon - Cherry Tree, Venus - Acacia Tree , Mercury - Mulberry, Sun - Ashwood, Mars - Oak, Jupiter - Maple or Chestnut, Saturn - Juniper or Chestnut. It is a single estate product as we only use our biodynamic grapes.
The Traditional Balsamic Vinegar of Modena is a PDO product, meaning that it can only be produced in the area of Modena or Reggio Emilia with local varieties of grapes.
The product undergoes organoleptic, acidity and density tests performed by the Tasting Commission at the Modena Chamber of Commerce in order to obtain the prestigious denomination of Traditional Balsamic Vinegar of Modena PDO. As a further guarantee, every product with this denomination has to be bottled by the Producers Consortium inside the Chamber of Commerce.
