Vegan Raw Chocolate Energy Balls

No-Bake Vegan Chia Almond Butter Chocolate Energy Boosters

Dry

  • 200g pecan nuts
  • 100g pumpkin seeds
  • 100g rolled oats
  • 6/8 tbsp cacao powder and 2/3 of Cacao Nibs
  • ⅓ cup shredded unsweetened coconut (plus ¼ cup for rolling optional)
  • 1/2 teaspoon salt
  • Maca
  • Lucuma
  • 1 teaspoon cinnamon

Wet

  • 1 cup (~220 g – 15) dates, pitted (if dry, soak in warm water for 10 minutes, then drain well)
  • 1/4 cup raisins
  • 4 Tbsp chia seeds
  • 2 Tbsp flax 
  • 2 Tbsp hemp seeds
  • 4 heaped tbsp almond/peanut butter
  • 2 tablespoon coconut oil
  • 2 tablespoon Olivocracy Organic Extra Virgin Olive Oil #TWO 
  • 2 tablespoon water
  • 1/3 cup Maple Syrup
  • 1 teaspoon vanilla
  • Fresh Chilli Pepper

Method

  • Put Chia, ground flax and ground hemp seeds to soak in water in 200ml of water for about 15 min, leave in the fridge to set
  • Place all the dry ingredients first in a food processor and then the wet ones
  • Blitz until chopped and starting to clump together, pulse or mix until combined. We want here to be small pieces but not overly processed
  • If it’s a bit dry, add a drop more of Olivocracy #TWO
  • Using a tablespoon measure, spoon out mixture and roll in balls. Roll the mixture into walnut-sized balls with lightly oiled hands
  • Optional: coat the outer wet with either shredded coconut or cacao powder or whole grain flour
  • Keep in a sealed container for 2 weeks in the fridge (to set pop in the fridge or freezer for 15 minutes. Otherwise, eat as is! Will keep fresh in an air-tight bag or container for up to a week. Freeze for longer term storage.)
