Vegan Raw Chocolate Energy Balls
No-Bake Vegan Chia Almond Butter Chocolate Energy Boosters

Dry
- 200g pecan nuts
- 100g pumpkin seeds
- 100g rolled oats
- 6/8 tbsp cacao powder and 2/3 of Cacao Nibs
- ⅓ cup shredded unsweetened coconut (plus ¼ cup for rolling optional)
- 1/2 teaspoon salt
- Maca
- Lucuma
- 1 teaspoon cinnamon
Wet
- 1 cup (~220 g – 15) dates, pitted (if dry, soak in warm water for 10 minutes, then drain well)
- 1/4 cup raisins
- 4 Tbsp chia seeds
- 2 Tbsp flax
- 2 Tbsp hemp seeds
- 4 heaped tbsp almond/peanut butter
- 2 tablespoon coconut oil
- 2 tablespoon Olivocracy Organic Extra Virgin Olive Oil #TWO
- 2 tablespoon water
- 1/3 cup Maple Syrup
- 1 teaspoon vanilla
- Fresh Chilli Pepper
Method
- Put Chia, ground flax and ground hemp seeds to soak in water in 200ml of water for about 15 min, leave in the fridge to set
- Place all the dry ingredients first in a food processor and then the wet ones
- Blitz until chopped and starting to clump together, pulse or mix until combined. We want here to be small pieces but not overly processed
- If it’s a bit dry, add a drop more of Olivocracy #TWO
- Using a tablespoon measure, spoon out mixture and roll in balls. Roll the mixture into walnut-sized balls with lightly oiled hands
- Optional: coat the outer wet with either shredded coconut or cacao powder or whole grain flour
- Keep in a sealed container for 2 weeks in the fridge (to set pop in the fridge or freezer for 15 minutes. Otherwise, eat as is! Will keep fresh in an air-tight bag or container for up to a week. Freeze for longer term storage.)
