During the many tasting sessions, markets and trade shows, people, in front of bread and extra virgin olive oil, have always asked for balsamic vinegar. It seems normal for them to associate olive oil and balsamic vinegar when thinking about Italian cookery. Well, I must admit they are right. In Italy there are 43 PDO (Protected Denomination of Origin, a certification protecting the quality of local productions) versus 27 in Greece and 26 in Spain. 20% of Italian production is organic. Italian small productions remain strong despite being less competitive on the high street market.
